Asparagus Spring Tart Recipe

What I love about this tasty treat is how easy and quick it comes together, yet how fancy and delicious it looks. It also is a great way to put your asparagus harvest to use.
Asparagus Spring Tart
1 sheet of puff pastry
1 cup of ricotta cheese
pinch of salt, pepper, and garlic powder
2 tablespoons of dijon mustard
1 clump of asparagus with ends trimmed off
Preheat over to 400F and line a baking sheet with parchment paper.
Lay out your puff pastry and gently score a frame about 1” in from the edge of the sheet. Do not cut through, just lightly score.
Whip together ricotta, mustard, one of the eggs, salt, pepper, and garlic powder. You can also add a dash of red pepper flakes or a splash of lemon. Whisk until fairly smooth, then spread the mixture in an even layer inside the frame on the puff pastry.
Lay the asparagus on top and gently press them into the ricotta mix. Season with more salt and pepper.
Whip up your other egg and lightly eggwash the outside edge of the puff pastry.
Bake for 20 minutes and enjoy!
